Kale Salad


Kale Salad

2-3 T. Olive Oil
Juice from ½ lemon
Salt and pepper to taste
Pinch of red pepper flakes
2 cloves garlic – crushed

Whisk together all ingredients above.  
Pour over a bunch of torn up kale.  
Massage into kale.  
Shred a generous amount of Parmesan cheese over kale and mix well so there is a good coating.  
Let sit for 15 minutes.  
Toss with 2-3 T of bread crumbs.  
Serve.
